Our Choclatique Black Onyx is an intensely black, Dutch-processed cocoa powder that has been alkalized to the extreme, resulting in a dark, jet black cocoa (not to be confused with copier toner). When used in baking it produces an impressive black-as-coal colored product. Choclatique Black Onyx has less fat and tends to create a drier finished product. We strongly recommend using a 50/50 mixture of Choclatique Black Onyx and Choclatique Red Cocoa and to add a little more shortening. If you want to use 100% Choclatique Black Onyx, be sure to increase the shortening in the recipe. This will also alleviate the dryness. Available in 14-oz. packages; sealed for freshness.
